Spicy potato spring rolls


Spicy potato spring rolls



This is  HOT!

Ingredients:

  • 2 medium potatoes (pealed and cut into small cubes)
  • 2 medium onions (chopped)
  • 2 tablespoon cumin seeds
  • 1 tablespoon coriander powder
  • 2 tablespoon spicy paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

The spicy paste:
  • 1 garlic clove
  • 2 tablespoon crushed chilly
  • 1 tablespoon coriander powder
  • 1/2 teaspoon salt (or more)
  • 2 tablespoon extra virgin olive oil
  • Optional: to spice it up even more add 1 teaspoon of hot pepper sauce (warning: extra hot!)
To glue the spring rolls ends:
Whisk an egg OR mix some flour with water until you have a thick paste-like consistency. I prefer the flour-water mix.

Steps:

Take out the spring rolls from the freezer, wrap them with a wet clean towel and keep them on the counter until the filling is ready.

Add all of the spicy paste ingredients in a small food processor and blend them well.




Heat the oil in a pan over high heat, add the potato cubes, onions, cumin and stir them for 10 minutes.






Add the salt, pepper, spicy paste and stir for 1 min. The filling is now ready



Prepare the flour-water mix (the glue)




Pack 1-2 teaspoon of the filling on one end of the spring roll as in the picture



Fold the sides of the spring roll. Stable the free end with anything heavy (ex:spoon as in the picture).


Wrap it until you reach the free end, brush the end with the flour-water mix and stick it.


Hint: you can wrap as many as you want and keep them in the refrigerator to fry them the next day.

Heat the oil in a deep fry pan and start frying the spring rolls with the glued end facing down.

Serve them hot
