Chocolate and hazelnut muffins


Chocolate and hazelnut muffins







Makes: 10 cupcakes
Preparation and cooking time: Preparation: 10 minutes

                                                         Baking: 15-20 minutes

                                                          Total: 25-30 minutes




Ingredients:

¾ stick unsalted butter (at room temperature)

¾ cup granulated sugar

2 eggs

1 teaspoon vanilla extract

½ cup yogurt

½ cup cocoa powder

¾ cup all-purpose flour

2 teaspoon baking powder

Pinch of salt


Topping:

200g chocolate and hazelnut bar

1 tablespoon semisweet chocolate chips

Roasted unsalted hazelnuts (whole and crushed)


Steps:


Preheat the oven to 190 C
Beat the butter and sugar





Add the egg, vanilla extract and whisk well

Add the yogurt and beat

Mix the dry ingredients (flour, cocoa powder, baking powder and pinch of salt)



Add the dry ingredients to the wet and mix them well (take care not to over mix)



Bake them for 15-20 minutes or until they are ready (test if cake is ready by placing a tooth pick all the way till the bottom, if it comes out clean, cake is ready)

Let them cool for 10 minutes on a wire rack

Melt the bar and chips together, mix it well and top the cupcakes with melted chocolate and crushed hazelnuts

Serve them hot or cold
