Chicken and Orzo Soup
شوربة لسان العصفور بالدجاج
It
is full of flavors, delicious and easy. My all time favorite soup.
Ingredients:
- 2.5 Liter water (hot)
- 2 boneless chicken breasts
- ½ teaspoon cinnamon
powder
- ½ teaspoon cardamom
powder
- 2 small cardamoms
- 2 small cinnamon sticks
- ½ teaspoon salt
- ½ teaspoon white pepper
- 3 medium tomatoes (freshly
squeezed)
- 2-3 tablespoon tomato
paste
- ¾ cup orzo
Garnish:
Parsley
(minced)
Steps:
Heat
1 L of water over high heat and stir chicken breasts for about 30 minutes or
until they are cooked.
Take
out the chicken breasts, dispose the water and shred them into pieces (you can
cut it into cubes before stirring them in the boiling water)
Heat
1.5 L of clean water over high heat. Once it starts boiling add the chicken,
fresh tomato juice, tomato paste and stir for 3-4 minutes.
Add
the cinnamon powder, cardamom powder, salt, white pepper, small cardamoms,
cinnamon sticks and stir for 2 minutes.
Add
the orzo, cover the pot and cook them all over medium heat for 15 minutes.
Sprinkle
the parley and serve it hot.
