Vanilla
fluffy bites
Makes 1 big sponge cake or 10 medium cupcakes or 24 mini cupcakes (as in the picture)
If your craving a fluffy light cake, a sponge cake is what you are looking for.
Ingredients:
4 egg yolks
4
egg whites
1 1/4 teaspoon vanilla extract
1/3 granulated sugar
4 tablespoon water
1 cup all-purpose flour
2 teaspoon baking powder
Pinch of salt
Steps:

Steps:
Preheat the oven to 180 C
Separate the eggs into yolks and whites in two separate bowls
Add 1 teaspoon of vanilla extract to the egg yolks and 1/4 teaspoon to the egg whites
Add the sugar to the egg yolks and mix them well until they become very light in color
Add
the water (cold water preferably “not to scramble the eggs!”)
Sift the flour and baking powder. And add them to the egg yolks
Fold the flour gently in the mixture (don't over mix)

Add the pinch of salt to the egg whites and whisk them well until you get a big fluffy cloud.
Add the fluffy cloud to the mixture and fold it very gently (you want to keep the air in the mixture)
Pour the cake batter in the tray and bake it in the preheated oven for 25-30 minutes
Top it with whatever you like and serve it hot or cold
