Basboosa (Arabic dessert)

Basboosa/hareeseh (Arabic dessert)
بسبوسة/هريسة بالقشطة وجوز الهند

Makes 12 pieces (medium size as in the picture)

Ingredients:

·         1 cup semolina

·         ½ cup chopped coconut chips or fine flakes

·         2 tablespoons granulated sugar

·         1 teaspoon baking powder

·         Pinch of salt (less than 1/8 teaspoon)

·         50g unsalted butter ( ½ stick of butter) melted

·         125ml thick cream

·         ½ cup full fat milk (or less, depends on the consistency)

·         1 tablespoon Tahina

Garnish:

Almond flakes or chopped almond chips or whole peeled almonds

Steps:

Preheat the oven to 180-200 degree Celsius.

Mix the semolina, salt, coconut chips, sugar and baking powder all together in a bowl.

Add the melted butter and mix.

-          Add the thick cream and mix.

Add the milk and mix (just enough to get a cake like consistency mixture)

Brush the tray base and its edges with Tahini

Pour the batter into the tray and smoothen its top with your fingers or any flat instrument.

Cut it into squares using a spatula.

Decorate every piece with almond flakes or almond chips (or whole peeled almonds)

Bake them in the preheated oven for about 20-30 min or until they are nice and golden

Take them out and pour the cold sugar syrup on them (as much as you prefer) while they are still hot.

Serve it hot or cold
