DELICIOUS STRAWBERRY CUPCAKES
Makes: 8-10 medium size cupcakes or 24 small cupcakes
Ingredients:
¾ stick of butter
¾ cup of granulated sugar
2 eggs
1 teaspoon vanilla extract
½ cup of yogurt
2 drops of strawberry food flavor
1 to 2 drops of red food coloring
1 ¼ cup of all-purpose flour
2 teaspoon baking powder
Pinch of salt (very little amount of salt about
1/8 teaspoon!
Optional (as in picture): chopped fresh strawberries mixed with ½ tablespoon of flour

Frosting:
White marzipan (as in picture)
Or any other frosting/icing of choice
Steps:
Preheat the oven to 180-200 degree Celsius.
Beat the butter with sugar
Add the eggs and vanilla extract
Mix the batter well
Add the yogurt and mix
Add two drops of strawberry flavor, 1 to 2 drops
of red food coloring and mix.
In a separate bowl sift the flour and the baking
powder with a pinch of salt
Add the sifted dry ingredients to the wet and
mix (few folds just to get all ingredients together) Take care not to over mix.
Add the chopped strawberries with the last fold
Fill ¾ of the paper (because it is going to rise
a little in the oven)
Bake them in the preheated oven for about 20 min
or until they are ready, this step depends on the thickness of your cupcakes
and your oven so stick a wooden toothpick to check if they are ready.
Let them cool on a wire rack then decorate them
with marzipan or any other frosting/icing of choice
Serve them cold
