Chicken pasta and tomato sauce


Chicken pasta and tomato sauce



Serves: 4 dishes
Preparation and cooking time: 20 minutes

Ingredients:
Chicken:

2 boneless skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon white pepper

Pasta:
300g pasta
1 liter boiling water
1 tablespoon oil
1/2 teaspoon salt

tomato sauce:
2 tablespoon oil
1 small onion 
1 medium carrot 
135 tomato paste 
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 black pepper
1/4 cinnamon powder
1/2 teaspoon sugar
1-2 tablespoon oregano
0.7 liter boiling water
1-2 tablespoon shredded Parmesan Cheese


Steps:
Cut the chicken breasts, season and grill them nicely




Heat 1 liter of water over high heat, season it, cook the pasta for 5-7 minutes maximum
Cut the carrot and onion into small cubes



In a deep saucepan heat the oil over high heat, add the carrots and onions
Stir them a little until onions become golden


Reduce the heat to low, add the tomato paste, salt, sugar, cinnamon, oregano, white and black pepper. Stir them a little to mix them well before adding the water 

Turn up the heat back to high, add the water and stir for 5-7 minutes



In a food processor or with an electrical hand mixer, blend the sauce well until it is nice and thick.




Drain the pasta well.

In a skillet, put the sauce and pasta over medium heat. 

Stir them for 2 minutes, sprinkle the Parmesan cheese just before you turn off the heat.

Garnish with more oregano and cheese

Serve it hot
